The 31 March pick is lighter, with more floral lift; the 2 April pick runs deeper in umami and a fuller texture. Same place, a small seasonal shift you can taste.\u003c\/p\u003e\n\u003cp\u003eAnji Bai Cha is the umami lover’s green: quieter in aroma than Long Jing, but with a sustained freshness that hangs on.
